The staff of The Bear deal with the fallout from the mixed review from The Chicago Tribune. Cicero and The Computer bring in a clock and say the restaurant has 1400 hours (about two months) to drastically change something, or they will have to close.
Higher costs mean the restaurant can afford fewer ingredients, meaning a menu change. Marcus and Tina are struggling to keep up with the fast pace of service, and Syd is still torn between going to work with Adam Shapiro or staying with The Bear. Carmy changed some terms of the agreement, but we don’t know how. Richie hires the crew from Ever to help get things in order. The only thing working well is The Beef lunch window, and Ebraheim brings on an advisor to try and figure out how to make it work even better.

Carmy tells Syd he has decided to move to a fixed menu instead of a chaos menu to help with service and costs. Syd seems intrigued by this idea, but is interrupted by a phone call saying her father had a heart attack and is in the hospital.
Outside the restaurant, Sugar tries to figure out how to manage the restaurant’s business and be a new mom. Carmy visits Claire, but she doesn’t really accept his apology, though she thanks him for offering it. Marcus sells his mother’s house, but doesn’t want to get together with his dad, who has been reaching out to him on a repeated basis.
